Gone Bananas

I’ve gone bananas! I picked up a bunch of bananas during a recent trip to the grocery store and set out on an experiment to make healthy chips. Instead of drying the bananas plain, I decided to spice things up a bit with local honey and cinnamon. Honey and cinnamon are getting a ton of attention recently due to the plethora of health benefits they provide. Thank you to my neighbors, Jack and Julie, for sharing this SUPER local honey with us (they live less than 3 miles away).
To make these banana chips:
– Lay out a piece of parchment paper and cut the banana into thin slices (approx 3/8 inch).
– Arrange the bananas so they are not touching and sprinkle with cinnamon.
– To prevent major sticking, you can rub a very light coat of coconut oil on the tray (not required).
– Add a dot of honey and place on the tray, be sure they do not overlap.
– Allow to dry 6-12 hours.
– Enjoy and GO BANANAS!

(Caution: as you can imagine the honey can be a bit sticky. You may also dry the bananas without the honey and add it later.)
